U.S.: Seafood hot in 2013

The National Restaurant Association has released the results of its “What’s Hot in 2013” survey, and seafood appears twice in the top ten and again in the top 20.

According to the survey of more than 1,800 professional chefs, locally sourced meats and seafood will continue to be the hottest trend on restaurant menus next year.

Seafood shows up twice more on the list at No. 9, sustainable seafood, and No. 13, non-traditional fish.

Also included in the survey were questions about technology trends, rising food costs, and nutritious recipes. More than half (55 percent) of the chefs said they always make efforts to adjust dishes and recipes to be more healthful, while 37 percent said they cook with nutrition in mind, but that not all recipes are easily adjusted. 



When asked how to best handle the increasing cost of ingredients, 32 percent said changing menus, 25 percent said adjusting plate composition, and another 24 percent said exploring new sourcing options. Only 4 percent said that raising menu prices is the best strategy.
