This is a process of foreign matters inspection, evaluation and detection in raw material from the phase of preservation, transport to processing in factories by using 2 methods, including (1) the sensory that is applied to Agar, CMC (Carboxymethyl cellulose), CMC + Agar mixture, the mixture of Agar + PVA (polyvinyl alcohol), the mixture of Agar + Adao (gelatine), starch and other foreign matters; (2) the method of quick chemical test that is applied to starch, PVA, CMC, Adao, Agar and Agar originated from animals.
The process applies the principle of selective sampling in order to achieve the highest delectability of foreign matters in shrimp. Inspectors apply their skills and sensory method to identify the abnormal signs on tested samples; and compare them with the criteria of guidelines on the detection of foreign matters in raw shrimp to assess and determine the foreign matters in samples or not. If shrimp is discovered or suspected the foreign matter injection, inspectors will use the quick chemical test method to determine kinds of foreign matter in shrimp. If the result is not accurate, inspectors will send the samples to analyze in the laboratory.
